Ingredients:

  • 2 large eggs at room temperature
  • 2/3 cup granulated sugar
  • ½ teaspoon grated lemon peel
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flower
  • 10 tablespoons unsalted butter (melted and cooled slightly)
  • Pinch of salt

Flexipan Madeleines and Medium Perforated Sheet.

Instructions:

  1. Preheat oven to 375°F and place your Madeleines Tray on Medium Perforated Baking Sheet.
  2. Melt butter in microwave and set in refrigerator until needed.
  3. Beat eggs and sugar together with whisk just until blended. Add in vanilla, lemon, and salt.
  4. Add in flour, beating just until combined.
  5. Add in cooled melted butter in a slow, steady stream, beating as you pour. Beat until blended.
  6. Use a one tablespoon to add batter into each well.
  7. Bake until puffed in the middle and golden around the edges, about 13-15 minutes. Let cool before serving.
  8. Dust cookies with powdered sugar if desired.
bon TIP: Madeleine's only stay good for a few days so freeze leftovers if needed.

SO GOOD!

I've always been a fan of madeleine cookies but wasn't keen on piping out the batter to get the right shape.  The madeleine tray is awesome!  I dipped one end of the madeleine in the bon COOK chocolate ganache recipe and dusted with some powdered sugar.   They were delicious and looked so professional!
