Soft Pretzels

Ingredients

  • 3 cups Flour
  • 1 tablespoon Active Dry Yeast
  • 1 teaspoon Sugar
  • 2 tablespoons Butter, softened
  • 1 1 /3 cup Water
  • 1/4 teaspoon Salt
  • 3 tablespoons Baking Soda
  • 3 cups Water
  • ¼ cup Butter, melted
  • 2 tablespoons Sel Gris Salt

Directions

  1. Preheat oven to 450 degrees F and place oven rack in center position
  2. Place Bonmat on a Perforated Baking Sheet and set aside
  3. In Mixing Bowl, mix together 1 cup Flour with the Yeast, Sugar, softened Butter and 1 1/3 cup Water
  4. Stir to combine and allow to sit until it begins to bubble, about 15 minutes
  5. Once bubbling, stir in Salt and gradually incorporate the remaining 2 cups Flour until it is a sticky dough
  6. Turn dough out onto a Roul’Pat and knead until smooth, about 5-8 minutes
  7. Using a pastry cutter or Scraper, divide dough into 8 pieces and allow them to rest for 5-10 minutes
  8. Roll out each piece of dough until approximately 12 inches, then twist the dough into a pretzel shape and place on a Bonmat
  9. In a shallow saucepan, bring the remaining Water to a boil, then remove from heat
  10.  Add Baking Soda and gently stir
  11.  Dip each pretzel in the Water for 25 seconds, then turn and dip the other side for 25 seconds
  12.  Remove from Water and place back on Bonmat until all are completed
  13.  Brush with melted Butter and sprinkle generously with Sel Gris Salt
  14.  Bake until a deep golden brown, about 8-10 minutes

*bon TIP: If you like the outside of your pretzels to have extra texture, and be a little flaky, let them rest for an extra 15-20 minutes after you divide the dough

Queso Recipe

Ingredients

  • 1 Tbsp. Butter
  • 4 oz. Cream Cheese
  • 1 ½ c. Whole Milk
  • 16 oz. Sharp Cheddar Cheese, shredded
  • 1 ½ Tbsp. Flour
  • 4 oz. Chopped Green Chilies, drained
  • ½ Tbsp. Ancho Chili Powder

Directions

  1. In a large skillet melt the Butter.
  2. Add in Cream Cheese until softened, slightly melted. Add in the Milk and whisk until Cream Cheese is melted and combined with Milk.
  3. In a bowl, toss together the Cheddar Cheese and Flour.
  4. Slowly add the Cheese to the Milk mixture, 1 c. at a time, constantly stirring to melt Cheese before adding the next cup.
  5. Once all Cheese is added, whisk until completely smooth.
  6. Add Green Chilies and Chili Powder, stir to combine. Serve warm. 

*bon TIP: This queso is mild. If you want a little extra kick, chop up a fresh Jalapeno in the eco-chop, adding it with the Chilies.
