Ingredients

  • 1 Tbsp. Butter
  • 4 oz. Cream Cheese
  • 1 ½ c. Whole Milk
  • 16 oz. Sharp Cheddar Cheese, shredded
  • 1 ½ Tbsp. Flour
  • 4 oz. Chopped Green Chilies, drained
  • ½ Tbsp. Ancho Chili Powder

Directions

  1. In a large skillet melt the Butter.
  2. Add in Cream Cheese until softened, slightly melted. Add in the Milk and whisk until Cream Cheese is melted and combined with Milk.
  3. In a bowl, toss together the Cheddar Cheese and Flour.
  4. Slowly add the Cheese to the Milk mixture, 1 c. at a time, constantly stirring to melt Cheese before adding the next cup.
  5. Once all Cheese is added, whisk until completely smooth.
  6. Add Green Chilies and Chili Powder, stir to combine. Serve warm. 
 
bon TIP: This queso is mild. If you want a little extra kick, chop up a fresh Jalapeno in the eco-chop, adding it with the Chilies.

A fun family gathering

I made this to take to my cousin's house recently, for just the girls, and we all loved it! It makes a great presentation, too. This would be great for the Superbowl and is a meal in itself.
