Ingredients

  • 12 5-inch Corn or Wheat Tortillas or large Wonton Wrappers
  • 3 tablespoons Canola Oil
  • 1 ½ pounds Tilapia or Cod
  • 2 teaspoons FRENCH PANTRY Sel Gris Salt
  • Dash of Pepper
  • 2 teaspoons Lime zest, grated
  • 3 cups shredded Cabbage or Lettuce
  • 2 cups Mango, cubed
  • 2 ripe Avocados, cubed
  • ½ cup chopped fresh Cilantro or Parsley
  • 4 Green Onions, thinly sliced
  • Juice of 2 Limes
  • 1 cup Greek Yogurt
  • 1 tablespoon finely chopped canned Chipotle Pepper in Adobo Sauce

Directions

  1. Preheat oven to 375 degrees F, place oven rack in center position and place the Muffin Tray on the Perforated Baking Sheet and set aside
  2. Warm Tortillas in microwave for 30 seconds or until soft, then coat each side with Oil and place in the muffin wells, letting the sides gently fold around the edges
  3. Slice the Fish into 1-inch cubes and place in Mixing Bowl
  4. In Bowl, combine Salt, Pepper, Herb Blend and Lime Zest, then sprinkle over the Fish, coating well
  5. Begin filling the wells first with the Cabbage, then with the Fish bites and bake until cooked through (about 15 minutes)
  6. In Mixing Bowl, toss Mango, Avocado, Cilantro, Green Onions, ½ Lime Juice and Salt to taste
  7. In another small bowl, combine Yogurt, Chipotle Peppers and remaining Lime Juice
  8. Serve Fish Tacos topped with Mango Salsa and Yogurt blend
