Ingredients

  • ⅔ cup butter, softened
  • ⅔ cup white sugar
  • 2 cups cornmeal
  • 1 ⅓ cups all-purpose flour
  • 4 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 3 large eggs
  • 1 ⅔ cups milk
  • 1 cup chopped fresh jalapeno peppers, or 1 7oz can of diced jalapenos, undrained.

Directions

  1. Preheat oven to 400 degrees F. Place desired bon COOK Mold or Tray (Triangle Tray is pictured) on Perforated Baking Sheet and set aside.
  2. Beat butter and sugar together in a Stainless-Steel Mixing Bowl until smooth.
  3. Combine cornmeal, flour, baking powder, and salt in another bowl.
  4. Stir eggs and milk in a third bowl.
  5. Pour 1/3 milk mixture and 1/3 flour mixture alternately into butter mixture; whisk until just mixed. Repeat with remaining ingredients and stir in jalapeno peppers.
  6. Pour evenly into each well of the bon COOK Tray or spread evenly into any Flexipan Mold (i.e, the Fluted Loaf Mold, Sunflower Mold or Fluted Square Mold).
  7. Let cool for 10 minutes before unmolding. Enjoy!

bon Tip: For muffins bake for 18-20 minutes. For molds cook for 25-30 minutes or until a toothpick inserted comes out clean.
