Strawberry Rhubarb Galette

Ingredients

For the filling:

  • 1 Sheet cold, Puff Pastry – (Traditional or Gluten Free)
  • 1 cup strawberries, cleaned & sliced or halved depending on size
  • 2 stalks rhubarb, sliced (not too thinly)
  • 2 tablespoons flour – (All purpose or Gluten Free 1 to 1)
  • 1 teaspoon vanilla bean paste
  • 5 tablespoons granulated sugar

To finish:

  • 3 tablespoons ground almonds
  • 1 egg yolk, whisked
  • 1/2 tablespoon granulated sugar or vanilla sugar

 

Instructions

Instructions:

  1. Preheat oven to 375 degrees. Place BONMAT on perforated sheet and set aside .
  2. Roll out the puff pastry dough on pastry mat to a circle or square. Carefully place the dough on BONMAT atop Baking sheet.
  3. Mix the strawberries, rhubarb, flour, vanilla and sugar.
  4. Dust the center of the pastry with the ground almonds. This will help absorb moisture.
  5. Evenly distribute the fruit over the center of the pastry, leaving approx. 1 inch free around edge.
  6. Fold the pastry over the fruit and brush the pastry with the whisked egg yolk and sprinkle with the sugar.
  7. Bake for approx. 40 minutes and allow to cool before removing from the baking plate.
  8. Serve with vanilla ice cream, crème fraîche, or Chantilly cream.

BONTIP: This recipe may sound fancy although it is super simple to make. Create your own version by swapping out fruit or toppings or use this tried and true straight from France recipe.
