Easy Chicken Tostadas

Ingredients

  • 5 slices thin, lean bacon
  • 1 medium sweet onion, halved and thinly sliced
  • 2 cloves garlic, minced in the Mini-Chopper
  • One 14-ounce can crushed tomatoes
  • 2 cups shredded rotisserie chicken breast
  • 2 teaspoons FRENCH PANTRY Chicken Herb Blend
  • Sriracha Sauce to taste
  • 1/2 teaspoon ground cumin
  • FRENCH PANTRY Sel Gris Salt, to taste
  • 2 cups shredded coleslaw mix
  • Juice of 1/2 lime, juiced with the Citrus Press
  • 1/4 cup light sour cream
  • 1/4 cup FRENCH PANTRY Chipotle Aioli
  • 1 teaspoon Chipotle Tabasco Sauce, or to taste
  • 8 street corn tortillas
  • 1/2 cup Cotija cheese, crumbled
  • 1 ripe avocado, cubed

 

 

 

 

Instructions

  1. Place the Forteez Large Round Mold on a microwave-safe plate.
  2. Add the bacon slices and cover with the Octagonal Bonmat. Process in the microwave on high for 2 minutes.
  3. Rotate the bacon and continue cooking until crisp.
  4. Remove to paper towels and set aside.
  5. Remove all but one tablespoon of the bacon fat from the mold.
  6. Add the onion and garlic and toss to combine. Cover with the Octagonal Bonmat and microwave on high for one minute.
  7. Chop the cooled bacon. Add the bacon, tomatoes, chicken, herb blend, sriracha, cumin, and salt and stir to combine thoroughly.
  8. Cover and microwave on high for two minutes or until bubbling.
  9. Toss the coleslaw mix with the lime juice, and season with salt.
  10. Combine the sour cream, aioli, and Tabasco in a small bowl using the Mini Whisk. If desired, crisp the tortillas by placing in a lightly oiled small frying pan over medium heat for one to two minutes on each side.
  11. To serve, top the tortillas with the chicken mixture and coleslaw.
  12. Drizzle the sour cream mixture over the tostadas and top with cheese and avocado.
