Crustless Vegetable Quiche

Active Time:  15 to 20 minutes

Ingredients

  • 8 eggs beaten 
  • 3/4 cup Greek yogurt 
  • 1 cup shredded sharp cheddar cheese
  • 2 cups baby spinach  
  • 1 small yellow onion 
  • 12  Campari tomatoes sliced 
  • Salt and pepper to taste 

Instructions

  1. Preheat oven to 375 °F.
  2. Set aside the Fluted Tart Mold on a Medium Perforated Baking Sheet.
  3. In a mixing bowl, whisk egg, Greek yogurt, and cheese. 
  4. Add spinach to the mixture, and stir.
  5. Place onions in Eco Chop and chop, add to mixture.
  6. Pour mixture into Fluted Tart Mold. 
  7. Top with tomatoes, salt, and pepper to taste. 
  8. Bake for 45 minutes or until the center is set.
