Granola Snack Bar

14 large snack bars plus 12 medium size bars

  • 2 cups rolled oats
  • 3 cups of crispy rice cereal crushed into chunky pieces
  • 1 cup finely shredded sweetened coconut
  • 1 cup chopped almonds
  • 1 cup of pumpkin seeds
  • 1 cup dried cherries
  • 1 teaspoon of salt
  • 2 teaspoons of cinnamon
  • 2 teaspoons of vanilla
  • 1 cup honey
  • 1 cup butter
  • 1/2 cup almond butter
  • 1/2 cup chocolate chips or white chocolate for drizzling (optional)


  1. Preheat oven to 350 °F.
  2. Place the Snack Bar Tray on a Medium Perforated Baking Sheet and set aside.
  3. Set aside the Scalloped Square Tray on a Medium Perforated Baking Sheet.
  4. In a large bowl, combine all dry ingredients and mix thoroughly.
  5. In a microwave-safe bowl, combine honey, butter, and almond butter. Heat in microwave for 45-60 seconds, or until butter is melted. Add vanilla and whisk until thoroughly blended.
  6. Pour mixture over dry ingredients and mix well.
  7. Scoop ingredients into the wells of the trays. Using the Medium Bonmat, firmly press mixture into Trays and bake uncovered for 15-20 minutes or until slightly brown.
  8. Remove from oven and set aside to cool. Once slightly cool, cover with your Bonmat and refrigerate for 2 hours or overnight for the best result.
  9. Unmold and serve.
  10. Once cooled, drizzle with melted chocolate for an extra sweet treat!
