Mango Sticky Rice

Ingredients

  • 1 cup Thai Sweet or Sticky Rice
  • 1 cup h20
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • A pinch of salt
  • 2 ripe mangos, sliced
  • Sesame seeds or toasted mung seeds (for garnish)

Instructions

  1. Rinse the rice and soak it in water for 30 minutes. Drain and transfer to the medium-round mold
  2. Add 1 cup of water
  3. Cover with the octagonal bonMat and microwave on high for 8 to 10 minutes, checking at 5 and 7-minute intervals.
  4. Remove from Microwave
  5. Place the coconut milk and sugar in a mold and stir to dissolve the sugar.
  6. Place in the microwave and cook on a on a low setting for 1 to 2 minutes.
  7. Pour half of the milk mixture over the rice, stir, and allow it to set for 15 minutes.
  8. Scoop out rice to form a ball and place it on a plate.
  9. Arrange sliced mango around the sticky rice ball.
  10. Plate the rice balls and spoon the milk mixture over each sticky rice ball, leaving a small puddle on the plate.
  11. Sprinkle with toasted sesame seeds and serve.
