Apple-Cinnamon Baked Oatmeal

Ingredients

  • 2 cups rolled oats
  • 1/3 cup chopped walnuts or pecans (optional)
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups unsweetened applesauce
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/3 cup maple syrup or honey
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 2 medium apples, peeled, cored, and diced

 

 

 

 

Instructions

  1. Preheat oven to 350°F. Place square mold on the Perforated Baking sheet.
  2. In a large bowl, mix the rolled oats, chopped nuts (if using), baking powder, ground cinnamon, and salt.
  3.  In another bowl, whisk together the applesauce, milk, maple syrup or honey, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients and stir until thoroughly mixed.
  5. Gently fold in the diced apples, distributing them evenly throughout the oatmeal mixture.
  6. Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.
  7. Bake in the preheated oven for 35-40 minutes or until the top is golden and the oatmeal is set.
  8.  Once baked, remove the oatmeal from the oven and let it cool for a few minutes before serving.

bon TIP: To serve, portion the apple-cinnamon-baked oatmeal into glasses or bowls and, if desired, top each serving with a dollop of Greek yogurt and a fanned strawberry or a drizzle of additional maple syrup.
