Champagne Fruit Salad

Ingredients

  • 1 mango, peeled and diced
  • 1/2 pineapple, peeled and diced
  • 1 1/2 cups strawberries, sliced
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 3 kiwi, peeled and sliced
  • 3 Tbsp fresh mint, chopped

Dressing:

  • 1 cup orange juice
  • 3/4 cup champagne or sparkling wine (or sparkling grape juice)
  • 2 Tbsp honey
  • 1 Tbsp Cointreau (optional)
  • 1 Tbsp FRENCH PANTRY Strawberry Balsamic, reduced

Instructions

  1. Add all prepared fruit to a large serving bowl and sprinkle with mint.
  2. In a small bowl or measuring cup, whisk orange juice, champagne (or sparkling juice), honey, and Cointreau (if using).
  3. Stir in French Pantry Strawberry Balsamic Reduced.
  4. Pour dressing over fruit and toss gently until coated.
  5. Serve right away, or chill 30–60 minutes for a colder, more “marinated” salad.

bonTIPS:

  • Add the bubbly right before serving if you want maximum sparkle.
  • Toss gently to keep berries from breaking down.
