Brigadeiro (Brazilian Chocolate Cake)

Ingredients

Cake Ingredients:

  • 4 eggs
  • 1 cup sugar
  • ¼ cup oil
  • 1 cup flour
  • 1 pinch of salt
  • 1 ½ cups chocolate powder
  • ½ cups boiling water
  • ½ tablespoon vanilla extract
  • 1 ½ teaspoon baking powder
Brigadeiro Ingredients:
  • 1 can sweetened condensed milk
  • 1 tablespoon butter
  • 2 tablespoon cream (25% fat content)
  • 2 cups chocolate chips

Instructions

Cake Instructions:

  1. Preheat oven to 350°F and place the oven rack in the center position, then place Stainless Full Frame in Flaxiflat and both on Medium Perforated Baking Sheet.
  2. Separate the egg whites from the yolks and reserve them in a small bowl, then in Stainless Mixing Bowl, beat the yolks with sugar and oil.
  3. Mix flour, salt and 1 cup of chocolate baking powder.
  4. Alternately, add water and dry ingredients mixture to the yolk mix and combine to well incorporated, after, add vanilla extract.
  5. Beat the egg whites and add the baking powder, then add it gently to the flour mixture.
  6. Pour batter into the Flexiflat and bake for 40 minutes. While baking, make the brigadeiro.
  7. When the cake has cooled, cut it in half with a knife or nylon wire.

Brigadeiro Instructions:

  1. In a saucepan, add the condensed milk, ½ cup chocolate powder and butter and simmer until it is consistent and incorporated cream, then turn off the heat and add the cream and stir to keep it warm.
  2. Use half of the chocolate filling for the middle of the cake and the rest as the topping, then finish with chocolate chips to decorate.
