Pomegranate Salsa

  1. 2 cups pomegranate arils from 2 large pomegranate
  2. 6 mini cucumbers, chopped fine
  3. 1/2 medium size sweet onion, finely chopped
  4. 1/2 bunch cilantro finely chopped
  5. 3 stalks of celery chopped fine
  6. 2 tablespoons honey
  7. juice of 1/2 lime
  8. 3 tablespoons French Pantry EVOO
  9. 3 tablespoons French Pantry balsamic


To prepare the salsa, chop the ingredients separately using the ECO Chop and add them to a large bowl. Combine the pomegranate, cucumber, celery, red onion, and cilantro. In a separate bowl, whisk together the lime juice, balsamic, olive oil, and honey to make the honey lime dressing. Pour the dressing over the salsa and gently toss until well combined. You can extract the pomegranate arils from two large-sized pomegranates or purchase them already seeded for ease.

bonTIP: For additional flavor, add fresh mint or jalapeno.
