Two Way Roasted Potatoes

Ingredients

  • 3 russet potatoes, washed and scrubbed, skin on
  • 3 sweet potatoes, washed and scrubbed, skin on
  • 2 yellow onions
  • 3 tablespoons EVOO
  • 3 tablespoons FRENCH PANTRY Zesty Mediterranean Herb Blend
  • 3 garlic cloves
  • Salt and pepper to taste
  • 1 cup Parmesan cheese

Instructions

  1. Preheat oven to 400°F. 
  2. Place Bonmat on Large Perforated Baking Sheet and set aside. 
  3. Cut ends off potatoes with skin on and cut into 1 inch chunks.
  4. Place into a large mixing bowl. 
  5. Cut skin off onion and dice using Eco Chop about ½ inch chunks. 
  6. Use Mini Herb Chopper to dice garlic. 
  7. Add to bowl along with EVOO, herb blend, salt and pepper.
  8. Spread onto Bonmat. 
  9. Bake at 400°F for 30-35 minutes, add more salt, pepper and herbs to taste. Sprinkle parmesan on top and drizzle with FRENCH PANTRY Blackberry Balsamic.
