Gluten-Free Irish Apple Cake

Ingredients

For the Cake:
  •   2 cups gluten-free all-purpose flour
  •   1 teaspoon baking powder
  •   1/2 teaspoon baking soda
  •   1/2 teaspoon salt
  •   1 teaspoon ground cinnamon
  •   1/4 teaspoon ground nutmeg
  •   1/2 cup, plus 2 Tablespoons unsalted butter, softened (or dairy-free alternative)
  •   3/4 cup granulated sugar
  •   2 large eggs
  •   1 teaspoon vanilla extract
  •   1/2 cup buttermilk (or a dairy-free milk alternative with 1 tsp vinegar mixed in)
  •   3 cups of peeled, sliced apples (tart apples like Granny Smith work well)
Topping:
  1/4 cup granulated sugar
  1 teaspoon ground cinnamon

  1. Place Medium Round mold on Perforated Baking Sheet and set aside
  2. Preheat your oven to 350°F (175°C
  3. Grease and flour a 9-inch round cake pan with gluten-free flour or line it with parchment paper.
  4. Mix Dry Ingredients: In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside
  5.  Cream Butter and Sugar: In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  6. Add Eggs and Vanilla: Beat the eggs one at a time, mixing well after each addition.
  7. Combine Wet and Dry Ingredients: Gradually add the dry mixture to the creamed mixture, alternately with the buttermilk, mixing until just combined.
  8. Gently fold the sliced apples into the batter.
  9. Pour the batter into the Medium Round Mold and smooth the top.
  10. Prepare the Topping: In a small bowl, mix the granulated sugar and cinnamon. Sprinkle over the top of the batter.
  11. Bake in the preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
 Unmold within the first ten minutes and serve warm or at room temperature.
BONTIP: Always have all the ingredients for the cake at room temperature, and butter is best after being left out overnight.
