Burrito Bowl with Cilantro Lime Rice

Ingredients:

For the Rice:

  • 1 cup long-grain rice (Jasmine)
  • 2 cups water
  • 2 tablespoons French Pantry Lime oil or, 1 lime (zested and juiced)
  • 1/4 cup fresh cilantro, chopped
  • 1 garlic clove minced
  • 1 teaspoon olive oil
  • 1 teaspoon French Pantry Sel Gris Salt to taste

For the Eggs:

  • 4 large eggs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the Toppings:
  • 1 cup black beans (canned or cooked)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup corn (canned or frozen)
  • 1/4 cup red onion, diced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Hot sauce (optional)

Instructions

Instructions:

  1. Prepare the Rice:
  2. Rinse the rice under cold water until the water runs clear.
  3. Combine rice water and 1/8 teaspoon of salt into the large round mold put mold on microwavable plate.
  4. Microwave on high for 6 minutes uncovered.
  5. Stir rice and cook an additional 9 to 12 minutes depending on your microwave note if doubling recipe, I recommend microwaving 10 minutes then stir and microwave another 10 to 12 minutes depending on your microwave.

BONTIP:

  1. If using brown rice you may need an additional 5 to 7 minutes or five to 10 minutes when doubling four while rice is finishing combine lime oil or juice of one lime olive oil garlic and one teaspoon of salt in a mold and mix.
  2. Remove rice from microwave and fluff with fork pour mixture over rice fluff mix and enjoy.

2. Cook the Eggs:

  1. In a skillet, heat olive oil over medium heat.
  2. Crack the eggs into the skillet. Cook sunny-side-up or scramble, seasoning with salt and pepper as desired.
  3. Remove from heat once the eggs are cooked to your liking.

3. Assemble the Burrito Bowl:

  1. In a bowl, start with a base of cilantro lime rice.
  2. Top with black beans, cherry tomatoes, corn, diced avocado, and red onion.
  3. Place the cooked eggs on top.

4. Garnish:

Add additional fresh cilantro, a squeeze of lime, and hot sauce if desired.

BONTIP: Feel free to customize it with any additional toppings you like, such as cheese or salsa!
