Ingredients

Everyday Easy Fish Tacos

  • 12 (5-inch) corn or wheat tortillas or large wonton wrappers
  • 3 tablespoons lime oil
  • 1 ½ lbs. tilapia or cod fish
  • 2 teaspoons Sel Gris Salt
  • Dash of pepper
  • 2 teaspoons French Pantry FISH Herb Blend (DHM00005)
    2 teaspoons lime zest, grated
  • 3 cups shredded cabbage (pickled or plain) or lettuce –

For the Peach Salsa:

  • 2 cups peaches, cubed -(Fresh if in season, canned if not in season)
  • 2 ripe avocados, cubed
  • ½ cup chopped fresh cilantro or parsley
  • ½ red onion, sliced or chopped
  • 1 red pepper
  • Juice of one lime

For the yogurt sauce:

  • 1 cup Greek yogurt
  • 1 tablespoon finely chopped canned chipotle pepper in adobo sauce
  • Juice of one lime

Instructions

For the Tacos:

  1. Place oven rack in center position and preheat oven to 375 degrees F.  Place the Tray on the Perforated Baking Sheet and set aside.
  2. Warm tortillas in the microwave for 30 seconds or until soft. Coat each side with oil and place in the wells, letting the sides gently fold around the edges.
  3. Slice the fish into 1-inch cubes and place the fish in a mixing bowl. Use a grater to zest lime.
  4. In a small bowl, combine the salt, pepper, FISH Herb Blend, and lime zest. Sprinkle the spice mix over the fish and coat well.
  5. Begin filling the muffin wells first with the cabbage and then with the fish bites. Bake until cooked through, about 15 minutes.
  6. Serve Fish Tacos topped with Peach salsa and yogurt sauce.

For the Peach Salsa:

In a bowl, toss peaches, avocado, red pepper, red onion, cilantro,  juice of one lime, and salt to taste.

For the Yogurt Sauce:

In a second small bowl, combine yogurt, chipotle chiles, and remaining lime juice.
