For the Tacos:
- Place oven rack in center position and preheat oven to 375 degrees F. Place the Tray on the Perforated Baking Sheet and set aside.
- Warm tortillas in the microwave for 30 seconds or until soft. Coat each side with oil and place in the wells, letting the sides gently fold around the edges.
- Slice the fish into 1-inch cubes and place the fish in a mixing bowl. Use a grater to zest lime.
- In a small bowl, combine the salt, pepper, FISH Herb Blend, and lime zest. Sprinkle the spice mix over the fish and coat well.
- Begin filling the muffin wells first with the cabbage and then with the fish bites. Bake until cooked through, about 15 minutes.
- Serve Fish Tacos topped with Peach salsa and yogurt sauce.
For the Peach Salsa:
In a bowl, toss peaches, avocado, red pepper, red onion, cilantro, juice of one lime, and salt to taste.
For the Yogurt Sauce:
In a second small bowl, combine yogurt, chipotle chiles, and remaining lime juice.
