Ingredients

  • 1.5 cups fresh pumpkin seeds (scooped straight from the pumpkin)
  • 1 to 2 teaspoons flavored salt of your choice (Red wine, Basil Parmesan, Curry Coconut, Garlic Paprika, Lemon Thyme, or create your own)

Instructions

  1. Clean the seeds: Scoop the seeds from your pumpkin. Place them in a colander and rinse them under cold water. Use your fingers to separate and discard the large chunks of stringy pumpkin pulp.
  2. Leave them slightly damp: Shake the colander well to remove excess water, but do not pat them completely dry with a towel. You want a thin film of moisture left on the seeds so the salt can cling to them without oil.
  3. Season immediately: Transfer the damp seeds to a bowl. Sprinkle your chosen flavored salt over the seeds and toss them thoroughly. The salt will dissolve slightly in the surface moisture and coat the shells.
  4. Preheat the oven: Preheat your oven to 325°F (163°C).
  5. Spread them out: Line a baking sheet with parchment paper (highly recommended since there is no oil to prevent sticking to a bare pan). Spread the seasoned seeds in a tight, single layer.
  6. Roast until crisp: Bake for 20 to 45 minutes. Stir the seeds around every 10 minutes through the cooking time to ensure they dry out and roast evenly. Watch them closely during the last 5 minutes—without oil, they can transition from toasted to burnt quickly. They are done when they look completely dry, slightly golden, and snap easily when bent.
  7. Cool and serve: Remove them from the oven and let them cool completely on the baking sheet. They will become even crispier as they cool.

bon Tips for Success Without Oil:

  • Expect a different texture: Oil helps heat transfer efficiently and creates a shiny, fried-like crunch. Without it, your seeds will have a lighter, completely dry, and beautifully toasted “air-popped” texture.
  • Finely ground salt works best: If your flavored salt has very large, heavy crystals, grind it down slightly before tossing. Fine grains will adhere much better to the damp seeds.
