Mushroom Frittata

Ingredients

  • 8 eggs beaten
  • 3/4 cup Greek yogurt
  • 1 cup shredded fontina cheese
  • 1 ½ cup mushrooms
  • 1 yellow onion, sliced thin
  • 3 sprigs of flat or curly parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 °F.
  2. Place the Fluted Pie Mold on top of Medium Perforated Baking Sheet.
  3. In a mixing bowl, beat egg, Greek yogurt, and cheese.
  4. Place mushrooms on Eco Chop and pull 5 times.
  5. Repeat with onions.
  6. Add both mushrooms and onion to the egg mixture.
  7. Pour mixture into Fluted Pie Mold.
  8. Bake for 45 minutes or until the center is set.

bon TIP:  Garnish with fresh parsley and shredded parmesan cheese.
