- Place the Mini Canele tray on the perforated baking sheet and set it aside.
- Mix the rolled oats, pumpkin seeds, nut butter, honey, vanilla, and salt in a large bowl until thoroughly combined.
- Stir in chocolate chips if desired.
- A small scoop or spoon fills the mini bon tray with the mixture, filling each cavity evenly.
- Press the mixture down into the cavity so it is solid without air pockets. ( I use the bottom of the scoop to do this)
- Cover Mini Canele tray with the Square bonmat, lightly pressing down on the bonmat leaving it on the tray as a cover.
- Place the covered tray in the refrigerator for at least 30 minutes to set and form the mini bon bite.
- Once firm, pop the energy bites out of the tray and store them in an airtight container in the refrigerator for up to a week.
