Ingredients

  • 7½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1½ teaspoons fine sea salt
  • 4½ cups granulated sugar
  • 2½ cups fat total (butter, olive oil, or a blend)
  • 7 large whole eggs
  • 1 additional egg yolk
  • 2½ tablespoons pure vanilla extract
  • Citrus zest as desired (scaled)
  • 2½ cups sour cream, Greek yogurt, or Labne

Instructions

  1. Preheat oven and place the FORTEEZ 6-Loaf Tray on a Perforated Baking Sheet.
  2. In a large bowl, mix flour, baking powder, baking soda, and sea salt.
  3. In a second bowl, combine sugar, fat, eggs + yolk, vanilla, and citrus zest as desired.
  4. Mix wet and dry together, then fold in sour cream/Greek yogurt/Labne until fully combined.
  5. Divide batter into bowls (one portion per flavor), mix in add-ins, fill tray cavities, and bake until a toothpick comes out clean. Cool before glazing.

bonTIPS

  • The “7 eggs + 1 yolk” keeps the batter stable when dividing into many bowls.
  • Don’t overmix after combining. Stop when the batter is just smooth.
