Sweet Potato Cauliflower Mash

Ingredients

  • 1 pound sweet potatoes, peeled and chopped
  • 3 cups cauliflower florets
  • 2 cloves garlic, unpeeled
  • 3 tablespoons clarified butter or oil of choice
  • 2 tablespoons FRENCH PANTRY Roasted Garlic and Chive Herb Blend
  • ½ teaspoon salt, FRENCH PANTRY, Sel Gris adjust to taste
  • ¼ teaspoon FRENCH PANTRY, Tellicherry pepper, adjust to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss the chopped sweet potatoes, cauliflower florets, and unpeeled garlic cloves with 1 to 2 tablespoons of clarified butter or oil, add the FRENCH PANTRY Roasted Garlic and Chive Herb Blend, salt, and pepper until everything is well coated.
  3. Place the Bonmat on the Medium Perforated Baking Sheet. Spread the vegetable mixture in a single layer on top of the Bonmat.
  4. Bake in the preheated oven for about 25 to 30 minutes or until the sweet potatoes and cauliflower are tender and lightly browned. Stir halfway through for even roasting.
  5. Once cooked, remove the baking sheet from the oven and let the vegetables cool for a few minutes.
  6. Squeeze the roasted garlic from its skin, then transfer the roasted vegetables to a large mixing bowl. Mash the mixture with a potato masher until smooth, adding the remaining tablespoon of clarified butter or oil for creaminess.
  7. Taste and adjust salt and pepper as needed, ensuring the herb blend is well incorporated for a rich flavor.
