Ingredients

Muffin Ingredients

  • 2 cups flour
    (For gluten-free: use 2 cups King Arthur Gluten-Free Measure for Measure Flour)
  • 3/4 cup coconut sugar or maple sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon French Pantry Sel Gris
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup avocado oil or melted coconut oil
    For gluten-free richness: use 1/4 cup melted unsalted butter and 1/4 cup oil
  • 3 eggs
  • 2 cups shredded zucchini, spun out in the Eco Chop to remove excess moisture
  • 1/2 cup unsweetened applesauce
  • 1/2 cup chopped walnuts (optional)
  • 1 teaspoon  Madagascar Vanilla

Healthy Yogurt Frosting Ingredients

  • 1 cup plain Greek yogurt or dairy-free yogurt
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon French Pantry Madagascar Vanilla
  • Zest of 1 lemon or orange using the Mini Zester

Instructions

  1. Preheat oven to 350°F. Place the FORTEEZ Flower Tray on the Perforated Baking Sheet.
  2. In a large bowl, mix flour, coconut sugar, cinnamon, Sel Gris, baking powder, and baking soda.
  3. In a separate bowl, whisk together oil (or oil and butter), eggs, applesauce, and vanilla.
  4. Combine wet and dry ingredients. Fold in the spun-out zucchini and optional walnuts.
  5. Scoop batter into the FORTEEZ Flower Tray, filling each cavity about two-thirds full.
  6. Bake for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool completely before frosting.

Healthy Yogurt Frosting:

  • Whisk all ingredients until smooth. Chill until ready to use. Pipe or spoon onto cooled muffins.

  • Spin out shredded zucchini in the Eco Chop to remove excess moisture.
  • Let gluten-free batter rest for 10 minutes before baking to hydrate the flour.
  • Add butter to gluten-free muffins for better texture, moisture, and flavor.
  • Use the Mini Zester to brighten the frosting with citrus zest.
  • Top with edible flowers, fruit slices, or a sprinkle of cinnamon for a colorful finish.
