- 1/2 teaspoon baking soda
- 1/2 cup avocado oil or melted coconut oil
For gluten-free richness: use 1/4 cup melted unsalted butter and 1/4 cup oil
- 3 eggs
- 2 cups shredded zucchini, spun out in the Eco Chop to remove excess moisture
- 1/2 cup unsweetened applesauce
- 1/2 cup chopped walnuts (optional)
- 1 teaspoon Madagascar Vanilla
Healthy Yogurt Frosting Ingredients
- 1 cup plain Greek yogurt or dairy-free yogurt
- 2 tablespoons maple syrup or honey
- 1 teaspoon French Pantry Madagascar Vanilla
- Zest of 1 lemon or orange using the Mini Zester
