Today, our recipe love is all over our Roasted Chestnuts. My husband is Albanian and was raised in the Alps of Montenegro. He came to America at the age of 18 carrying with him a treasure trove of European traditions. One of his family Christmas favorites is the tradition of gathering around together and cracking open hot roasted chestnuts as we laugh and share stories of holiday’s past.
One of my family’s cherished Christmas times, which I always crave, is sitting together for a more formal Christmas dinner. A few years ago we decided to forego the formality and start more of a casual plating and serving of our Christmas meal. We now have the craving for the timed formal dinner and cannot wait to refresh our sit-down. A little more time around the table is always a good thing! A meal made from the heart serves both our appetite and our soul. What family traditions are you bringing back this year? Be the answer to what you crave and share with others to make it happen.
Roast Chestnuts
1. Preheat oven to 400F (200C). Static setting (fan off).
2. Arrange chestnuts in a single layer on a baking sheet. Check that all chestnuts are scored or slightly cut at tip.
3. Roast chestnuts in a preheated oven for 20 to 25 minutes. It might take a little more or less time depending on the size and quality of the chestnuts. Keep an eye on them, if they roast too long they burst!
4. Test: Take one chestnut out of the oven at the 20 minute mark and adjust cooking time as needed. Chestnut is fully cooked when it’s soft to bite once peeled.
5. Once cooked, wrap chestnuts in a slightly damp kitchen towel and let rest for 10-15 minutes before peeling.
