- 8 oz cream cheese, softened
- Two cloves garlic, minced
- 1/4 cup gluten-free breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- Salt and pepper, to taste
Wrapped in Bacon:
- 6 slices gluten-free bacon cut in half.
Instructions:
- Preheat your oven to 375°F (190°C). Place BONMAT on the Perforated Baking Sheet and set aside.
- Remove stems from mushrooms and chop them finely.
- In a skillet, sauté chopped mushroom stems and garlic until soft.
- Mix sautéed stems, cream cheese, breadcrumbs, Parmesan, oregano, salt, and pepper in a bowl.
- Fill each mushroom cap with the mixture.
- Wrap each stuffed mushroom with half a slice of bacon, securing it with a toothpick if necessary.
- Place on a BONMAT baking sheet and bake for 20 minutes or until golden.
ROASTED VEGGIE PLATTER
Ingredients:
- 2 cups Brussels sprouts, halved
- 2 cups carrots, sliced
- 2 cups sweet potatoes, cubed
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tsp French Pantry, Roasted Garlic, and Chive Herb Blend
Instructions:
- Preheat your oven to 400°F (200°C). Place BONMAT on Perforated Baking Sheet and set aside.
- Toss vegetables with olive oil, Rosemary, Basil, Thyme, Herb Blend salt, and pepper.
- Spread them on the BONMAT baking sheet in a single layer.
- Roast for 25-30 minutes, turning halfway, until tender and slightly caramelized.
SIDES
CAULIFLOWER MASH
Ingredients:
- One head cauliflower, chopped
- 2 cloves garlic, minced
- 1/4 cup heavy cream (or dairy-free alternative)
- 2 tbsp butter (or alternatives)
- Salt and pepper, to taste
Instructions:
- Place cauliflower pieces in the Large Round mold with Octagonal BONMAT as a cover.
- Steam cauliflower in microwave until tender, about 4 to 5 minutes. Or, roast at 425 degrees for 20 to 25 minutes.
- Drain and add garlic, cream, and butter.
- Mash with potato masher until smooth. Season with herb blend of choice and salt and pepper.
GREEN BEAN ALMONDINE
Ingredients:
- 1 lb fresh green beans, trimmed
- 1/4 cup sliced almonds
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions:
- Use the Large Round Mold with Octagonal BONMAT as a cover.
- Steam green beans in the microwave for 3-5 minutes, then shock in ice water. (this brings color alive and stops the cooking process)
- Heat olive oil, add garlic, and add almonds until golden.
- Pour over the green beans, toss with lemon juice, salt, and pepper, and cook for another 2 minutes.
QUINOA STUFFING
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 cup mushrooms, sliced
- 1 tsp dried sage
- Salt and pepper, to taste
* You can add your favorite vegetables to this basic recipe. We like adding Broccoli and sweet potato cubes, 1/2 cup each.
Instructions:
- Steam quinoa in the microwave in vegetable broth according to package instructions.
- In a skillet, sauté onion, celery, and mushrooms until soft.
- Mix sautéed vegetables into cooked quinoa, add sage, salt, and pepper, and stir to combine.
- Place in a 6-Round Tray and bake for 10 minutes. Remove from oven, unmold, and enjoy!
BONTIP: Pre-Bake butternut or acorn squash and fill with the Quinoa stuffing for the most beautiful and healthy presentation.
MAIN COURSE
HERB-ROASTED TURKEY
Ingredients:
- 1 turkey (10-12 lbs)
- 1/2 cup butter, softened
- 2 cups white wine (Sauvignon Blanc is best)
- 3 Tablespoon Rosemary, Basil, Thyme herb Blend
- 2 Tablespoon Roasted Garlic and Chive Herb Blend
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 325°F (165°C).
- Clean the turkey and pat it dry.
- Mix butter with herbs, salt, and pepper.
- Rub the mixture under the skin and all over the turkey.
- Place Turkey in the roasting pan.
- Cover Turkey with a double layer of cheesecloth.
- Baste with melted butter and wine mixture and repeat every 30 minutes for the first 2 hours. Also, turn your roaster every 30 minutes for more even roasting.
- Roast according to the turkey’s weight (around 13-15 minutes per pound) until the internal temperature reaches 165°F (75°C).
- Choose Gluten-Free Sauvignon Blanc wine. Here are some selections: Kim Crawford, New Zealand; Duckhorn Vineyards, California. Matua, New Zealand; Cloudy Bay, Marlborough, Bogle, California.
MAPLE-GLAZED HAM
Ingredients:
- 1 bone-in Ham (5-7 lbs)
- 1/2 cup pure maple syrup
- 1/4 cup Bordeaux Wild Pepper Mustard
- 1 Tablespoon French Pantry, Roasted Garlic and Chive Herb Blend
Instructions:
- Preheat your oven to 325°F (165°C). Place Large Round Mold on Perforated Baking sheet and set aside.
- Score the surface of the Ham in a diamond pattern.
- Mix maple syrup, mustard, and FRENCH PANTRY, Roasted Garlic, and Chive Herb Blend. Score the Ham and brush the mixture over it Ham.
- Place Ham in mold, cover with BONMAT baking mat and bake for 1.5 to 2 hours, basting with glaze every 30 minutes until heated.
DESSERTS
PUMPKIN PIE
Gluten-Free Pie Crust – Makes 2 Pie Crust or 1 Double Crusted Pie
Ingredients:
- 2 ½ cups of a Cup4Cup gluten-free flour
- 1 tablespoon sugar
- 1/2 teaspoon Sel Gris salt ground fine
- 1/2 cup chilled unsalted butter cubed
- 1 teaspoon apple cider vinegar
- 1/3 to 1/2 cup of water
Instructions:
- Combine flour, sugar, and salt in a bowl. Cut in butter until crumbly.
- Add cold water sparingly and mix until dough forms.
- Add apple cider vinegar
- Dump onto a Pastry Mat, shape it into a ball, and cut it in half.
- Shape each half into a disc, wrap in plastic, and refrigerate for 30 minutes or up to 2 days.
- If freezing, place the wrapped disc in a freezer-safe bag or container and seal it well. Freeze for up to 3 months. Thaw overnight in the refrigerator when ready to use.
- Roll out and fit into Fluted Tart mold or a 9 inch Round mold
Pumpkin Filling
Ingredients:
- 1 can (15 oz) pumpkin puree
- 3/4 cup sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 3 eggs
- 1 cup evaporated milk
Instructions:
- Preheat your oven to 425°F (220°C).
- Whisk together all filling ingredients until smooth.
- Pour into the Fluted Tart Mold for a beautiful pie crust and bake for 15 minutes.
- Reduce temperature to 350°F (175°C) and bake for another 40-50 minutes until set.
FLOURLESS CHOCOLATE CAKE
Ingredients:
- 8 oz dark chocolate, chopped (Gluten Free Chocolate)
- 1/2 cup butter
- 3/4 cup sugar
- 3 eggs
- 1 tsp vanilla extract
- 1/2 cup cocoa powder
Instructions:
- Preheat your oven to 375°F (190°C) and place a 9-inch Round mold on a Perforated Baking Sheet.
- Melt chocolate and butter together in a double boiler or in the microwave.
- Mix in sugar, eggs, and vanilla, blending well.
- Sift in cocoa powder and stir until combined.
- Pour into the mold and bake for 25 minutes. Cool before serving.
BREAD
GLUTEN-FREE DINNER ROLLS
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup butter, melted
- 1 egg
- 3/4 cup milk (or dairy-free)
Instructions:
- Preheat your oven to 375°F (190°C) and place rectangular mold on the perforated baking sheet and set aside.
- Combine flour, sugar, baking powder, and salt in a bowl.
- Mix in melted butter, egg, and milk until a dough forms.
- Scoop dough into Rectangular mold and bake for 15-20 minutes until golden.
CORNBREAD
Ingredients:
- 1 cup cornmeal
- 1 cup gluten-free all-purpose flour
- 1 tbsp baking powder
- 1/4 cup sugar
- 1/2 tsp salt
- 1 cup milk (or dairy-free)
- 2 eggs
- 1/4 cup melted butter (or alternative)
Instructions:
- Preheat the oven to 400°F (200°C). Place the Muffin Tray on a Perforated Baking sheet and set aside.
- Mix cornmeal, flour, baking powder, sugar, and salt in a bowl.
- In another bowl, whisk milk, eggs, and melted butter.
- Combine the wet and dry ingredients until mixed, then pour into the wells.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
