Ingredients

  • 2 cups coconut water
  • 2 cups baby spinach, packed
  • 1 full cucumber, peeled and sliced
  • 1 green apple, cored and chopped
  • 1 banana
  • Juice of 1 lemon
  • 8-10 fresh mint leaves
  • 1 cup ice

Instructions

  1. Use the Mini Chopper to finely chop the mint leaves.
  2. Use the Eco Chop to chop the cucumber and apple into even pieces.
  3. Press the lemon in the Citrus Press to extract the fresh juice.
  4. Add the coconut water, spinach, cucumber, and chopped mint to the Eco Chop container.
  5. Pump vigorously until smooth and fragrant, about 25-30 pumps.
  6. Add the apple, banana, and lemon juice.
  7. Continue pumping until the smoothie is completely smooth and vibrant green.
  8. Pour into a chilled pitcher.
  9. Serve over ice in stemless wine glasses.

Optional Upgrades:

  • Mocktail Presentation: Top with a splash of sparkling water.
  • Fresh Garnish: Garnish each glass with a thin cucumber ribbon and a sprig of mint.
  • Cocktail-Party Edge: Add 1 tablespoon fresh lime juice.

bonTIPS:

  • Chill the pitcher or glasses before serving for a more polished presentation.
  • Chop the mint first to release more flavor into the blend.
  • Use cold coconut water to keep the smoothie refreshing.
  • Serve in clear glasses to highlight the bright green color.
  • Make this smoothie up to two hours ahead and refrigerate. Stir gently before pouring. Do not re-blend, since the texture is best when fresh.
