Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pint grape tomatoes
  • 8 oz fresh mozzarella, cut in chunks
  • 1/2 cup fresh basil leaves
  • 2 tbsp FRENCH PANTRY EVOO
  • 4 tbsp balsamic vinegar
  • FRENCH PANTRY Chicken Herb Blend
  • FRENCH PANTRY Sel Gris Salt
  • FRENCH PANTRY Pepper of choice
  • Salt and pepper to taste

Instructions

1. Preheat the oven to 400°F. Place FORTEEZ Square Mold on the Perforated Baking Sheet

2. Place the chicken breasts in the Square mold. Brush each chicken breast with the EVOO and sprinkle with the chicken herb blend, ensuring they are evenly coated. Season with salt of choice from FRENCH PANTRY Daily Grind salt and pepper to taste.

3. Arrange the halved grape tomatoes around the chicken in the mold. Drizzle the tomatoes with 1 tablespoon of olive oil.

4. Roast the chicken and grape tomatoes in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the tomatoes are blistered.

5. Once the chicken is fully cooked, remove from the oven. Place the fresh mozzarella around each chicken breast.

6. Return the baking sheet to the oven for an additional 2-3 minutes, or until the mozzarella is melted and bubbly, and the chicken has a golden brown color.

7. Remove from the oven and sprinkle fresh basil leaves over the chicken and tomatoes.

8. Drizzle balsamic across the pan diagonally.

10. Serve the Caprese Chicken hot, accompanied by a side of your choice, and garnish with additional fresh basil if desired.
