Frozen Lemon Bliss Bites

Ingredients

  • 1 cup plain Greek yogurt (full-fat or 2% for best texture)
  • 3 large egg whites
  • 1/3 cup raw honey (adjust to taste)
  • Zest of 2 lemons
  • 1/3 cup fresh lemon juice
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1–2 tsp bon COOK French Pantry Lemon Oil, for finishing
  • Fresh raspberries, for topping
  • Optional: mint leaves or crushed freeze-dried raspberries

Instructions

  1. In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Slowly drizzle in the honey while beating until glossy and stiff.
  2. In another bowl, mix Greek yogurt, lemon juice, zest, and vanilla until smooth.
  3. Gently fold the meringue into the yogurt mixture until fully combined.
  4. Spoon into FORTEEZ Mini Muffin Tray or Medium Round Mold and freeze for at least 4 hours or overnight.
  5. To serve: Unmold, top with fresh raspberries, and drizzle with bon COOK Lemon Oil. Garnish with mint or crushed freeze-dried raspberries if desired.
