Thyme and Parmesan Shortbread Bites

Ingredients

  • ¼ cup Parmesan cheese
  • ¼ cup Almond flour
  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • Ground black pepper (to taste)
  • 1 tsp fresh thyme (for the dough)
  • 2 tsp fresh thyme (for garnish)
  • 5 ½ tablespoons butter (cold, cubed)
  • 2 large eggs
  • 2 tbsp grated Parmesan (for topping)
  • 2 tbsp grated Comté cheese (or substitute Gruyère or sharp white cheddar)

 

Instructions

  1. In a bowl, mix the Parmesan, almond powder, flour, baking powder, pepper, and 1 tsp thyme.

  2. Add the cubed butter and mix until a crumbly texture is achieved.

  3. Stir in the eggs until fully incorporated.

  4. Preheat oven to 180°C (350°F).

  5. Prepare your mold (FORTEEZ is the best go-to).

  6. Pipe the mixture using a pastry bag with a plain No. 9 tip.

  7. Sprinkle the tops with the extra Parmesan, Comté cheese, and remaining thyme.

  8. Bake for approx. 18 minutes, until golden.

bonTIP: Serve warm or room temp with a chilled glass of rosé, or pair with an elderflower lemonade for a classy non-alcoholic option.
